- 200g (2 cups) rolled oats
- 80g (1/3 cup) tahini
- 60g (3 tbsp) pistachio cream
- 60g (3 tbsp) honey or maple syrup
- 30g dark chocolate chips (60%+ cacao)
- 2 tbsp sesame seeds (for rolling)
- 1/4 tsp cardamom
- 1/4 tsp sea salt
- 1-2 tbsp water if needed to bind
Optional add-ins:
- 2 tbsp cocoa powder (for a darker, more chocolate-forward bite)
- 1 tbsp hemp seeds or chia seeds for extra nutrition
- Pinch of cinnamon
Instructions
Mix the Base
- Combine rolled oats, tahini, pistachio cream, honey, cardamom, and sea salt in a large bowl.
- Stir until fully combined — the mixture should be thick and sticky.
- If it is too dry to hold together when pressed, add water 1 tsp at a time.
- If it is too wet to roll, add 2-3 tbsp additional oats.
- Fold in dark chocolate chips.
Chill
- Cover the bowl and refrigerate for 30 minutes. Chilling makes the mixture easier to roll into balls.
Roll
- Place sesame seeds in a shallow bowl.
- Scoop approximately 1.5 tbsp of mixture per bite.
- Roll between palms to form a smooth ball.
- Roll each ball in sesame seeds to coat.
- Place on a parchment-lined tray.
Set
- Refrigerate 15 minutes to firm up.
- Transfer to an airtight container.
